They are excellent when cooked with aromatic herbs like rosemary, sage or basil. Borlotti also make a great addition to tomato-based stews. People use borlotti beans in risotto, casseroles, and soup. You can also incorporate them into Mexican recipes like refried beans. We make our beans in Italy by rehydrating and packing selected borlotti beans in water.
